has long enjoyed the reputation for producing deeply aromatic, medium-bodied
red wines. Located to the east of Bordeaux, the soil characteristics
are similar to St Émilion. The Chaudet vineyard has an established
reputation for excellence since 1560.
Cepages: Merlot, Cabernet Franc, and Cabernet Sauvignon
About the Producer:
Château Canevault, an award winning vineyard located on the Dordogne,
prides itself on its traditional methods of vinification. After
hand harvesting, the grapes are vinified then oak-aged for 6 to
12 months. The wine is filtered using egg whites, bottled, then
allowed to age in subterranean caves for 18 months. The Chaudets
create a wine that truly deserves the name 'grand vin.'
Recommended Food Pairings: This is a very 'food
friendly' wine which pairs exceptionally well with beef, lamb, duck,
fowl, and cheeses, whether the meats are simple roasted or grilled,
or served with sauces.
Tasting Notes:
A deep colored red with an intriguing bouquet, this well structured
wine presents supple tannins and the flavors of red fruits.
