Argentina
is currently the world's fifth largest wine producer by volume and
is becoming a serious player in the international wine market. The
Argentine wine industry is positioned to reap the benefits of its
heritage - old vines, unique geographical conditions - with new
technology and a mix of modern and traditional methods. It has also
made an exceptional home for several varietals: Malbec, Torrontés
and Chardonnay. It has come a long way since the first vines were
planted more than 400 years ago when the monks arrived from Spain.
Like
the rest of Argentina's wine-producing regions, the climate is dry
(the average annual rainfall is 150 mm) and relatively windy. The
region has alluvial soils which are typical of ancient valleys.
The altitudes in this territory are relatively high: between 800
and 1,400 meters above sea level.

the Producer: The
winery is located on the property and meets all the need of modern
winemaking: all stainless tanks and equipment, adequate chilling
and cooling, pneumatic bag press, controlled temperature fermentation,
high quality wood treatments, pure yeast culture and inert gas use.
This technology gives our team a huge say in the management and
control of the quality of the wine.
The winery started operations in 2002, with the HACCP standards
as part of its management ethos. Full traceability started from
day one.
To Produce our Torrontes: After pressing the fruit the resulting
juice is cooled and pumped to a holding tank for "cold settling".
The chilled juice is held at a temperature too low for fermentation
to occur so that the grape solids can settle out and the fermentation
proceed on "clean" juice. Fermentation: The juice
is then "seeded" with a cultured yeast and slowly fermented
under temperature controlled conditions in the vats for up to a
month. The juice has evolved into wine and only clarification, cold
stabilization and filtration is required before it can be bottled.
Tasting
Notes: Silky parchment shot with sparkling green
light hints at the floral scents of honeysuckle and jasmine combined
with aromas of ripe nectarine, peaches and a touch of pineapple.
On the palate, the wine is crisp and juicy, with intriguing peach,
lemon and orange zest flavors and suggestions of slate on the lengthy
finish. Good acid balance.

Food Pairings: Pairs well with Thai and Peruvian dishes as well
as strongly flavored salads and pasta dishes, onion soup, as well
as cheeses, shellfish and fish.
