Cérons
:
The white wines of Cérons, a tiny appellation near Graves
, rival
many of its celebrated, and hugely more expensive, colleagues from
the neighboring Sauternes and Barsac regions. The grapes are hand
picked and sorted, treated to traditional methods of vinification,
then rest in oak barrels for two years. Throughout France, the these
wines are prized for their unique artistry in winemaking as well
as for being the source of some of the best, longest-lived wines
produced in the region. Golden sweet white wines famous throughout
the world are only produced in a very small part of the southern
Bordeaux
region,
mainly in Sauternes and Barsac . The wines of Sauternes are made
from botrysized Sauvignon Blanc and Semillion grapes. The "noble
rot" Botrytis cinerea attacks the grapes causing them to crack
and shrivel. The fungus pierces the skins in order to feed on the
sugar and tartaric acid within. The grape dehydrates, concentrating
the sugar that is left. The invading rot also changes the chemical
composition of the remaining juices, producing glycerol, and the
rich, unctuous mouth feel that is the hallmark of a botrysized wine.

the Producer :
The Jaubert Family has long been a well-established family in Graves.
Xavier Jaubert is the fifth generation of his family to oversee
the vineyard and make wine. The wines from the Jauberts can be characterized
by their elegance and their finesse.
Tasting
Notes : Elegant. From
its golden color to its delightful, round palate of honeyed apricots,
this wine is elegant. While generally known as a dessert wine,
try it as an aperatif with Bleu Cheese or Pate.

addition, it is fabulous with melons, strawberries, fruit based
desserts, salted nuts and strong cheeses (bleu cheese, etc.)
