Champagne Unlike
other appellations in France, in making a champagne the
winemaker is seeking style and not the ultimate expression
of the grapes in a particular vineyard. This champagne is
elaborated in accordance with the tradition of great champagnes:
by direct maceration of Pinot Noir grapes - also known as "bleeding."
The resulting wine hints of light sweetness and berry fruits.

About
the Producer: Pierre Vollereaux represents the fifth
generation of his family to steward the 40 hectares of vineyard
located in Pierry - one of the shrines in the history of winemaking
in Champagne. The three main varietals of champagne: Chardonnay,
Pinot Noir, and Meunier, are grown in different plots dispersed
throughout the Champagne region. Pierre and Franck (father
and son) find that by varying the exposition of the grapes, each
may reside in a soil that is best suited to accentuate each grape's
qualities. The harvest is done by hand
Tasting
Notes Rosé: This
pink Champagne is powerful and full-bodied, noted for the aromas
and flavor of red berries.
An attracive salmon color, ethereal mousse, and fresh and vibrant
strawberry/cherry tones of ripe Pinot Noir on the bouquet. The palate
is firm, full-flavored and lively, nicely integrated with a refreshing
acidity and a clean-cut, lingering finish. Awesome.

Food Pairings: There is a party in every glass. This
Champagne is fabulous as an aperatif and pairs well with almost
any hors d'oevres. As or with dessert, it is a show stopper.
